Almost all of the videos I've seen, the deer squat.  While I know nothing is absolute in hunting from what I can see you should always aim a little low with a bow.

You learn where to aim at the various distances. Before a deer can jump he has to squat.  10-15 yds I aim only 1-2" low. 20-30 I aim about 4" low and a little forward.  40+ I aim right on the money and a little forward because the deer will be on his way back up by the time the arrow gets there.  But typically I don't shoot 40+. Just too much that happens with the deer movement between the bow going off and the arrow arriving.  It would have to be a calm deer or pre-occupied chasing a doe or something like that.
