How long does it take for the fish to freeze once out of the water in that cold?

Once out and on the ice I'd say no more than 10 minutes but it was below zero. I do know that those creme soda's were very slushy before you finished one... @--0--0105

When I was younger, I used to carry my ice fishing gear in the trunk of my car.  I was ready to go any time.  I haven't ice fished in years, but the last time I went, I went out with a guy from my church and we were out from 3 pm to almost 11 pm.  Other guys kept coming and going, but we stayed until we were the only two on the lake.  Oh, we did catch some fish, mostly crappies.  Not a lot, but enough to make it fun.
