It seems most people make turtle soup whenever they catch a turtle. That's what my father always did with his catch. It's alright but not my favorite. I like to take my turtles and fry them. First take your turtle and clean it, Next parboil it for a short period of time, then dice it into small cubes. Then place some olive oil in your skillet and heat on low, place the turtle meat, onions and diced peppers together in fry pan. Then cook till lightly brown all over. Kind of reminds you of sauteed pork. Definitely will get you out catching turtles.

I have only eaten turtle once and it wasn't cooked very well but I used to catch them out of my pond and take to my neighbor. I always heard that his was very good.

Sounds Great. I can smell it from here.

I used to feel the same way as you on turtle soup. But then I had Chico's turtle soup at the Northern Party. ##$%#111 Needless to say it won the wild game cook off. Popcorn

I used to de-bone mine before frying them, but decided that was too much trouble, so started cooking them in the crook pot until they fall off the bone, then fry them. It not only de-bones the meat, but tenderizes it too before frying.  Do you purge yours out before cleaning them?

I do I put them in the back of my truck in the plastic bed liner and fill with water and cove rthe bed with a sheet of plywood then I park in the shade for 2 -3 days addind water everyday-- After you take the turtle out you just back up and hit the brake to get the water out of the bed and hose her down.
