My dad is frying up some flathead catfish for dinner today. I can't wait to 12.

I actually prefer salt water fish to fresh water but here is my FW list.

#1  Walleye from Canada
#2  Crappie from Alabama
#3  Anything I didn't have to cook or clean.

My favorite would be Sauger first, Bream second, Crappie third, Channel Catfish fourth.

Never had Walleye or a most of those other cold (Northern) type fish.  Love my pan fish which are bluegill, perch and the occasional Crappie - then my Catfish!!!

Sorry, I forgot to give you the meaning of Sac-a-lait in my last post. It literally means, sack of milk, because the meat is so white, and it is French of course. In North La. it's called crappie or white perch.

We catch and eat a lot of pond bass and without a doubt any of them that are under 2lbs are hard to beat....with a little Louisianna Fish Fry for a batter....mmmmm...
