i was reading something about butchering your own venison, it suggested aging your venison in the refrigerator after deboning it. has anyone done this? how long can you age it in the fridge for?

I don't age anything unless it is marinating for the grill, and that is usually only for a few hours. I try to stay away from giving bacteria time to grow on the surface of anything.

Very good link! We always age ours for a couple days but the link says 5-7 days. The worst venison I ever had was I shot a nice doe at college and had to butcher it on my doorstep in town where I was renting and froze it right on the spot. Gamiest venison I've ever eaten. I ate it, but I really like venison. NOBODY else would touch it.
I think aging it in the fridge would do the same thing as hanging it to age. I can't think why having the deer "boned" still would prevent it from aging properly.
I read an article one time, I think "Fur Fish and Game" about a guy that hangs his venison for up to a month until he gets a green film on the meat, that he then scrapes off and butchers. I don't know but that's too long and too much bacteria for me.

I age my deer every year in my big cooler for several days.  I keep the water drained off and it works great.  The wife isn't going to let me put two deer in the frig for a week.  She is great but she does draw her line clearly.  Big White 7 day cooler from Wally World.  WORKS GREAT.

in my part of the country, aging a skinned whitetail for 6-7 days in a clean environment(garage, barn, shed etc.) is done when temperature outside is at least 40 degrees or lower.  suppose same would work in refrigerator.

I figure mine has aged enough on the hoof @--0--0105 Mine goes from the skinning rack to the freezer paper on the same day!!

A friend of my that processes meat told me to always let the meat age (start breaking down/decaying) for better meat.  The next best thing I bought was one of those air vacuum baggers.  The meat and fish we freeze stays in great shape all year long.  When I only used freezer paper the meat would get burned.

My experience with commercial processors is that they skin the deer as soon as it is brought in, then put in a cooler for 2 or 3 days, before they start butchering.  I think part of that is due to the meat being easier to handle while it's very cold (not frozen), and the fluids have had time to dry up.

I have a cooler that fits inside my fridge and age it there without the top on.  To warm down here to do it outside.  Have been doing it for over 30 years.     0-0-0-

From 2 to 5 days, depending on when the wife is ready to finish cleaning and freeze it.  She is in charge of that!!!    ;D

I somewhat age my venison in the fridge when I am butchering.  Usually I quarter up the deer and wrap them up and put them in a fridge I have in the basement.  Over the next two to three days I end up cutting it all up and grind the burger at the end.
